To manually sort the cards in your hand, click on the User Options button (see the red arrows in the following image),

click on the General tab (see the red arrow in the following image), then click on the button at the right of the label Manual card sorting (see the blue arrow).

If the symbol is red (as here) the manual ordering is NOT active, if green it is.
